It is customary that in rainy or cyclonic weather, Mauritians make faratas. These flour patties are traditionally enjoyed with curry for lunch or simply with butter and cheese for breakfast or a snack.

Ingredients:
For 10 faratas
- 850 g flour
- Two pinches of salt
- 44 cl of warm water
- 4 tablespoons of oil
Recipe:
Mix all the ingredients together and knead the dough until elastic.
Let it rest for at least an hour.
Make the dough into small balls, you should have 10 roughly even dough balls
On a floured surface, flatten the dough balls one at a time and roll into a squared shape using a rolling pin
Oil the rolled out dough using a pastry brush
Fold the square shaped dough in two and then in four so it forms a small folded square. This is what will give it a fluffy texture.
Oil the folded piece of dough and on to the next one
Let the dough rest for at least another hour
On a floured surface, roll out the dough into whatever shape you like or are able to
Oil a pan with your pastry brush and place the rolled out dough on the pan one at a time until lightly brown and crispy on the outside.
