I am an American expat currently living in the United Arab Emirates. When I complete my work here, I am strongly considering moving to Ecuador. Cuenca appears to a strong possibility. I would like to be able to find out more about this city - interests include the availability of organic produce (including apples), holistic/alternative health options, drinking water, quality of life, etc.
